Green Spelt, Cauliflower and Chilli Patties with Feta Yoghurt Sauce

Green Spelt has had a bit of a renaissance in recent years. It’s basically spelt harvested early. The grain then needs to be dried by gently roasting it, which gives it its distinct almost herb like flavour.
The patties go really well with feta cheese but because not everyone in our family likes feta, we opted to serve them with a feta and yoghurt sauce which is really simple and delicious.

Ingredients

serves 4.

    For the patties

  • 1 cup green spelt
  • 300g cauliflower
  • 1 red chilli
  • 1 egg, whisked
  • 1/4 tsp galangal powder (if you can get fresh, of course use fresh, grated)
  • 1 garlic clove,
  • 1/2 cup whole milk
  • 4 tbsp wholemeal spelt flour
  • salt to taste
  • a little oil for frying

For the sauce

  • 100g feta cheese
  • 3 tbsp full-fat yoghurt
  • 1 tsp olive oil

Instructions

    For the patties

  1. Cook the green spelt according to packet instructions. Drain and set aside.
  2. In a blender, blitz the chilli, garlic and cauliflower relatively finely, tip in a mixing bowl.
  3. In the same blender, add the cooked green spelt, galangal, salt and whole milk. Blend briefly and add to
    the vegetable mix.
  4. Stir in the whisked egg and spelt flour and mix well. The dough should not be too sticky. If it is, add more flour.
  5. Using a tablespoon, form little patties. Size is up to the chef, ours are usually about 5cm diameter and 1.5 cm thick.
  6. Heat a little oil in a frying pan. Once hot cook the patties for 3-5 minutes on each side
    For the sauce

  1. Put all ingredients in a blender and blend until fairly smooth. A couple of feta bits are actually really nice.
  2. Put in the fridge until needed.
