You only need 8 ingredients and about 25 minutes of your time to bake our yummy and healthy banana oatmeal cookies. I did not add any sugar or sweetener as I think that the bananas provide enough sweetness. Nevertheless if you prefer it sweeter, feel free to add any sweetener of your choice.
I usually divide my cookies into two batches, one with and one without raisins, as these dried fruits aren’t so popular with part of my family… hint, hint Victoria and mum! ;o)
In case you aren’t a fan of them either just skip the raisins and subsitute them with chocolate chips.
makes about 16 cookies
- 2 large, very ripe bananas
- 200g oats
- 50g raisins (or chocolate chips)
- 100g walnuts
- 1 tbsp flaxseeds (linseed)
- 1/4 tsp ground ginger
- 1/4 tsp cinnamon
How it’s done
Start with preheating the oven to 180° Celsius (350° Fahrenheit).
Peel the bananas and mash them with a fork. When you are feeling lazy you could also purré them in a blender. Add the spices and give it a good mix.
Continue by roughly chopping the walnuts. In a big bowl combine the oats, raisins, flaxseeds and walnuts. Add the mashed bananas and mix until everything is well incorporated.
Now you’ll need to form the cookies. I like to do this with my bare hands. Just take a good portion of the dough and form it into a relatively round shape. You may want to wet your hands as this simplifies the whole process.
Place the cookies on a lined baking tray and transfer them into the oven. They are done in about 15-20 minutes.
Once the hard work is done, just leave them to cool – or, if you are as impatient as I am, skip this step and eat them straight away (just be careful not to burn your tongue ;o) ).
