We love the combination of coconut and strawberries! So this week we have yet another recipe (have you already checked out the recipe for our vegan Strawberry & Coconut Cheesecake yet? 😉 ) with those special ingredients for you.
The recipe is super easy and can be done in less than 20 minutes.
Makes 1 serving
- 1 cup frozen strawberries
- 1 cup home made coconut milk
- 1 tsp coconut oil
- 1-2 dates for sweetness (optional)
How it’s done
For the coconut milk: blend all ingredients on high for about 3-5 minutes. Pour the mixture into a nutmilk bag and drain. Put aside.
Then blend 1 cup of the freshly made milk with the frozen strawberries and the coconut oil. You might want to add 1-2 dates for sweetness dependening on your personal preferences and the flavour of the strawberries.
