With a very active five month old baby to look after, I sometimes simply don’t seem to find time to eat. That’s very dangerous, because once my blood sugar levels are low enough I will eat about anything that crosses my way. I will even stop at the corner shop and spend my last change on sugary chocolate bars I instantly regret.
That’s why I’m trying to prepare for days like these with healthy snack alternatives that will keep me going.
I used to buy “Nakd” Cashew and Date bars, but thought that I really should be making them myself rather than buying as they are so simple. Three ingredients and 10 minutes, that’s all you need and you can always make a large batch and stick a couple in the freezer.
Makes 4 to 5 bars
- 1 cup of raw cashew nuts
- 3/4 cups of dried dates (make sure you remove the stones)
- 1/2 tsp ground cinnamon (optional)
How it’s done
Put all ingredients into a food processor and start to chop for around 1 minute. The mixture should now be quite crumbly. Break up any large lumps and continue to process until the mixture forms into a sticky lump. It should be oily and sticky with coarsely ground nut bits.
Once you are happy with the consistency, you can either form bars with your hands, or if you’d rather not get your hands sticky, you can line a small square dish with baking paper and and press in the mixture.
The bars now need to go into the fridge to chill, as this will help to firm them. Wrap them in baking paper or foil and take them out just before eating. They taste lovely at room temperature but their consistency is more like mash.
If you are using the dish version, make sure you cut the bars before you eat them.
